Pastry Chef de Partie (Fulltime)

As a Pastry Chef de Partie, you lead the pastry section by preparing and presenting exceptional desserts and pastry creations while ensuring consistency, food safety, and presentation standards. You supervise and develop the pastry team, maintain HACCP compliance, and contribute to creating memorable dessert experiences that exceed guest expectations.

What you will do

Lead the daily operations of the pastry section and ensure efficient production and service.

Prepare and present desserts, pastries, and baked items according to approved recipes, portion standards, and presentation guidelines.

Supervise, coach, and support Demi Chef de Partie Pastry and Commis Chef Pastry team members while contributing to their professional development.

Ensure all mise en place is completed before production and service begins.

Monitor dessert quality, consistency, presentation, and portion control throughout all production periods.

Maintain inventory levels within the pastry section, report ingredient shortages, and minimize waste through effective stock management.

Ensure all pastry products are stored, labeled, and rotated correctly according to FIFO, HACCP, and food safety regulations.

Assist in chocolate work, sugar artistry, plated desserts, and specialty pastry production while maintaining the highest quality standards.

Report equipment malfunctions, maintenance requirements, or food safety concerns to the Pastry Sous Chef or Head Pastry Chef.

Collaborate closely with the bakery team, culinary team, and Stewarding department to ensure smooth daily operations.

Your profile

Pastry diploma or equivalent professional culinary training.

Minimum 2–3 years of progressive pastry experience.

Strong knowledge of pastry techniques, plated desserts, chocolate work, sugar work, and food safety principles.

Experience in a hotel, resort, or high-volume hospitality environment is preferred.

Leadership, communication, and organizational skills with the ability to coach junior pastry team members.

Ability to work efficiently under pressure while maintaining exceptional quality standards.

Flexible to work shifts, weekends, and public holidays.

HACCP certification or willingness to obtain certification.
