Demi Chef de Partie Pastry (Fulltime)
As a Demi Chef de Partie Pastry, you support the Pastry Chef de Partie in preparing high-quality desserts and pastries while ensuring consistency, food safety, and presentation standards. You assist in training junior team members, maintain HACCP compliance, and contribute to delivering exceptional pastry creations that enhance the guest experience.
What you will do
Support the Pastry Chef de Partie in the daily operations of the pastry section.
Prepare and present desserts, pastries, and other sweet creations according to approved recipes, portion standards, and presentation guidelines.
Assist in supervising, coaching, and supporting Commis Chef Pastry team members while contributing to their professional development.
Support mise en place preparation and ensure the pastry section is fully prepared before production and service.
Monitor the quality, consistency, presentation, and portion control of all pastry products.
Assist in maintaining inventory levels, reporting ingredient shortages, and minimizing waste through effective stock management.
Ensure all pastry products are stored, labeled, and rotated correctly according to FIFO, HACCP, and food safety regulations.
Assist with chocolate work, plated desserts, pastry decoration, and specialty dessert production.
Report equipment malfunctions, maintenance requirements, or food safety concerns to the Pastry Chef de Partie or Pastry Sous Chef.
Collaborate closely with the bakery team, culinary team, and Stewarding department to ensure smooth daily operations.
Your profile
Pastry diploma or equivalent professional culinary training.
Minimum 1–2 years of progressive pastry experience.
Good knowledge of pastry techniques, dessert preparation, food safety, and HACCP principles.
Experience in a hotel, resort, or high-volume hospitality environment is preferred.
Strong communication, teamwork, and organizational skills.
Ability to work efficiently under pressure while maintaining exceptional quality standards.
Flexible to work shifts, weekends, and public holidays.
HACCP certification or willingness to obtain certification.
